Apple Layer Cake with Cream Cheese Icing

This cake is very versatile and can be made as squares — good for taking on a picnic or for celebrating someone's birthday or name's day. If you sprinkle it with some rum or apple juice (or even your favorite liqueur), it will be even tastier.

Cake Ingredients

  • 3 cups sifted flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 cups pared apples, small dice
  • ½ cup chopped walnuts or pecans
  • 1 teaspoon vanilla extract
  • 1 teaspoon grated lemon peel
  • ⅔ cup sugar
  • 1 cup salad oil
  • 3 eggs
  • Rum or apple juice (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Sift flour with baking powder and salt.
  3. In small bowl, combine chopped apple, 1/2 cup chopped nuts and lemon peel, set aside.
  4. In large bowl, combine sugar, oil, and eggs and beat well with a wooden spoon.
  5. Add dry ingredients to wer and mix well.
  6. Add the apple mixture and stir until well combined.
  7. Spread evenly into two 9-inch round cake pans, which have been greased and floured.
  8. Bake approximately 30 minutes at 350°F (180°C).
  9. Remove cake and with a cake skewer, punch some holes throughout each layer.
  10. Drizzle cake with some rum or apple juice while the cake is still warm.
  11. Let cool. Frost with cream cheese icing (below). The whole cake can be frozen.

Cream Cheese Icing

  • 1 (8z) package of cream cheese, room temperature
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1-2 cups icing sugar (confectioner's)
  • Small squeeze of lemon juice

Instructions

Using a mixer, blend all the ingredients together until smooth (removing lumps).
